I’m back in my home state of New Mexico and once again have access to green chile! I’ve been eating Mexican food pretty much constantly since getting home, and we’re putting chile in everything. A few nights ago, we made some delicious and easy gluten free potato pancakes with green chile. Here’s the recipe!
Potato pancakes with green chile
3 medium potatoes, peeled and shredded
1 tablespoon minced onion
2 tablespoons minced green chile (fresh/frozen or canned)
Salt and pepper to taste
2 tablespoons vegetable oil, for frying
Drain the liquid from the potatoes and chile (wrapping them up in a tea towel and squeezing over the sink works pretty well.) Once drained, put them in a bowl and mix in the onion, plus salt and pepper to taste. Make into patties by hand. Fry in the oil on medium to medium high heat. Flip after six minutes – you want them to be pretty golden brown before you flip. The second side should take about five minutes. Salt before the second flip, salt again, then serve!
These go great with Polish sausage – just make sure it’s gluten free. We just sliced and fried the sausage, but you could also cook with peppers and onions, or simmer it in gluten free beer. Serve the pancakes with a dollop of sour cream on top for some extra richness!
