Unicorn gluten free spritz cookies

Rainbow, or "unicorn" food seems to be everywhere these days! To this end, Grandma T and I created these magical gluten free spritz cookies.It seems like “unicorn” is the latest food trend – from unicorn hot chocolate to unicorn macarons, my social media feeds are full of rainbows, sprinkles and sparkles. Meanwhile, over Christmas my mom (Gluten Free Grandma T) broke out the *cookie press and made some incredible spritz cookies with my nephew. We combined forces to create these unicorn-inspired gluten free spritz cookies. Recipe by Grandma T, colors and sprinkles by me!

Gluten free spritz cookies

1 cup butter, softened
½ cup sugar
1 egg
1 ½ teaspoons vanilla
2 ¼ cups America’s Test Kitchen Gluten Free Flour Blend
½ teaspoon salt
½ teaspoon xanthan gum
*Food coloring
Sprinkles! I used *rainbow sugar and *pastel confetti
Optional: powdered sugar and milk for icing

Preheat oven to 400 F. Cream butter and sugar (by hand, or with a hand mixer or stand mixer). Add egg and vanilla and mix to incorporate. In a separate bowl, whisk flour, salt and xanthan gum. Add the dry ingredients to the wet slowly, mixing to incorporate. The end result is a sticky dough.

Pink, yellow and purple dough.

Separate the dough into three bowls. Use food coloring to dye each dough segment (we used yellow, pink and purple.)

Fill the *cookie press with the dough (we smashed some of the first color along the side of the tube, then stacked the other colors on top to allow each color space to come out the bottom.) Use the cookie press to create cookies in your desired shapes directly onto an ungreased baking sheet.

You can add your sprinkles now or bake them plain and add icing and sprinkles after. The cookies will take 6-9 minutes at 400 F (ours took right around 8.)

We did one tray with just sprinkles, and one tray plain. We made white, pink and blue icings from powdered sugar and milk to add a little more magic to our cookies. I added a white chocolate chip “unicorn horn” to some of them, along with a generous helping of sprinkles.

These would be really fun to make with kids or for a party. You could do the colors of your favorite sports team or use any pastels to make fun springtime/Easter treats.
